It’s that time of year when the cold is getting monotonous. Where we’re almost to springtime but it’s not quite time to take off our heavy socks and winter jackets. If you’re like us, maybe you’re feeling stir crazy and restless?
To help with your last wintertime push at cozy moments, we thought it would be nice to share our favorite soup recipes. We hope they’ll help break up the same old routine and bring some warmth back to your February.
Dreamy Winter Vegetable Chowder from The First Mess
This is Becky’s favorite soup recipe because it’s easy to make from just about any winter veggie in the fridge. It comes together beautifully and the crispy cabbage gives this soup a wonderful crunch!
Easy 3-Ingredient Cauliflower Soup From Tori Avey
All about ease, Courtney chose this cauliflower soup! She says, “this is literally the easiest soup ever. 3 ingredients. I sometimes can’t eat all the cauliflower I buy before it starts to go bad, so before that happens I’ll make it into soup! So easy, so fast, super delish.”
Russian Cabbage Borsch from Yummy Beet
Michon is our resident, “I looked at the recipe but I changed everything about it” staffer. She loves this recipe but says, “I personally prefer to skip carrots & potatoes in borscht, I like it more cabbage/beet-heavy. Doing half green cabbage & half red cabbage is also really yummy. Add a bit of cloves for tasting, you’d be surprised how well it pairs with this—thanks for the tip, mom ;)”
Curried Butternut Squash Soup from Minimalist Baker
This is Aubrey’s go-to soup for winter time! “I always play around with this recipe depending on what I’m feeling. The coconut oil and milk makes it a bit sweet, which is yummy, but if I’m wanting something heartier I’ll use ghee and bone broth. I also like to add in other veggies like cauliflower, carrots, or potatoes if I have them. I top with cilantro and lots of walnuts to give it a good crunch.”
Italian Sausage, Kale and Tortellini Soup from Cooking Classy
Jonathan knows a bit about staying warm, living in Colorado! He loves this recipe and says that he and his wife have been playing around with it a lot over this winter season!
Spanish Chickpea and Spinach Stew from Lazy Cat Kitchen
Nataly has been really into this stew lately. We like to imagine her with her honey and her husky dog curled up in a blanket on a chilly evening enjoying it. She says, “this is my stew JAM. I sub a couple things ie: spinach -> kale, red onion -> white onion and fresh tomatoes <3”
Big Mo Minestrone with Garden Fresh Vegetables From Cookus Interruptus
Lisa says this is soup is the perfect way to get in a serving or two of veggies. It’s one of our family’s favorites and it’s been keeping them warm all winter 🙂

I buy the already peeled and cut up bags of frozen butternut squash from Costco to save time. The red peppers add great flavor and the gremolata of bacon, chives and goat cheese is truly amazing. The website is aptly named!

Tomato soup 1 quart jar of tomatos blend in vitamix or blender
1 tbsp butter
1 clove of garlic minced
1 tsp basil dried
In a large saucepan put butter garlic and basil.cook for a few minutes.
Add 1 tsp of better than bouillon either chicken or veg base to the garlic mixture. Then add tomato. Heat and serve with a little heavy whipping cream.
